  • 2 cups mixed berries (fresh or frozen)
  • 1.5 cups plain Greek Yogurt
  • ½ cup almond flour
  • ¼ cup honey
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt

Instructions
 

  • Preheat the oven to 350°F (180°C). Grease 4 ramekins with cooking spray.
  • In a mixing bowl, combine the Greek yogurt, almond flour, honey, eggs, vanilla extract, baking powder, and salt. Whisk until smooth.
  • Divide the mixed berries evenly among the ramekins.
  • Pour the Greek yogurt mixture over the berries, filling each ramekin about 2/3 full.
  • Bake for 25-30 minutes, until the tops are golden brown and the centers are set.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

  • You can use any type of berries in this recipe, such as strawberries, raspberries, blueberries, or blackberries, or a combination of them.
  • If using frozen berries, let them thaw and drain any excess liquid before adding them to the recipe.
