Onion and Fig Jam

An easy simple onion and fig jam that you can use for multiple uses and occasions. Caramelized onions, and sweet beautiful figs, blend together to form this beautiful jam.

Ingredients
  

  • 2 pcs large onions, thinly sliced
  • 10-12 pcs ripe figs, diced
  • ½ cup brown sugar
  • ½ cup apple cider vinegar
  • 2 tbsp olive oil
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large saucepan over medium heat. Add sliced onions and a pinch of salt, stirring occasionally, until they soften.
  • Add diced figs, brown sugar, and apple cider vinegar to the pan, stirring to combine. Add the sprigs of rosemary and thyme and stir again.
  • Bring the mixture to a boil and then reduce the heat to low. Let the mixture simmer for 30-40 minutes, stirring occasionally, until it thickens and becomes a jam-like consistency.
  • Remove the rosemary and thyme sprigs from the pan and discard them. Taste the jam and adjust the seasoning with salt and pepper if necessary.
  • Let the jam cool and then store it in an airtight container in the refrigerator.

Notes

 

Chef Tips / Notes:

    • You can choose to strain the jam to get rid of the seeds and have a smoother finish. I decided that I wanted to enjoy the beautiful look and texture of the fig seeds. I love these seed specks!
    • You can also choose to alternatively caramelize the onion first to make it a slightly different taste - caramelized onion and fig jam. In this instance, I wanted to highlight the taste of the figs, however, I am a caramelized onion lover and it would also have been an amazing jam with caramelized onions.
    • A big batch can be made when figs are in season or when you come across a farmer's market with great figs at great prices. Simply freeze them in small batches and defrost overnight in the fridge when needed throughout the year.
