Instructions

  • Heat a non-stick skillet over medium heat and add the olive oil.
  • Once the oil is hot, add the onions and garlic and sauté for 2-3 minutes, until they begin to soften.
  • Add the mushrooms and bell pepper and continue to sauté for an additional 2-3 minutes.
  • Add the spinach to the skillet and stir until it wilts, about 1-2 minutes.

Instructions for the Egg White Omelette:

  • Heat another non-stick skillet over medium heat.
